RECIPE : My top 3 Brunches

Weekend is almost here and this means we are going to sleep late, chill in bed even little more and crave for something TASTY. For last couple of month my morning meals were pretty much alike - I have few favourite recipes in my arsenal that I was cooking depending on mood and product availability. I like to start the day with healthy and protein packed meal because I never know where my weekday will lead me and will I have an opportunity to eat proper meal afterwards. Besides, it sets healthy tone for brain and body that they will (hopefully !) follow onwards !

Here are my top 3 Breakfast / Brunch recipes - healthy, easy and quick, as always ! 

1. Fit Pancakes

Fit Pancakes are my absolute favourite for almost a year already - since my fit sis' showed me the recipe. We got creative with the original recipe and made some variations, so I will share with you  both ! 

Original Recipe - Ingredients (serves 1) :

40g grinned oats

1 egg + 2 egg whites

1/2 banana - smashed


Variation No.1 Recipe - Ingredients (serves 1) : 

35g grinned oats

5g brans 

1 egg or 2 egg whites

25g cottage cheese

1/2 banana - smashed


Preparation :

1. Whip eggs.

2. Add all ingredients and mix. You can use mixer or blender, or just do it with a fork.

3. Cook on pan until golden-brown.

4. Eat with a piece of fruit, honey or homemade jam if you fancy !

2. Cooked Eggs with Toasted Bread

When I am bored of sweet Fit Pancakes and want something salty (which happens extremely rare) or do not have enough ingredients, I opt for egg toasts. 

Ingredients (serves 1) : 

2 eggs

2 slices of whole grain bread or dark ciabatta

olive oil

salt, pepper

Optional : cheese, fresh veggies

Preparation :

1. Make eggs - boil or cook on pan without using oil.

2. Toast bread, also without any fats. 

3. Sprinkle olive oil over toasted bread.

4. Cut eggs in slices and put on toasts.

5. Sprinkle over salt and pepper.

6. Add fresh veggies and/or cheese, if you feel like it ! Personally I do not like eating vegetables in the morning but cheese gets a big YES whenever ! (not-so-healthy, I know)

3. Bruschetta with Mozzarella, Tomatoes and Basil

Ingredients (serves 1) :

2 slices of dark ciabatta

1/2 mozzarella

1 small tomato

2-4 leaves of basil

olive oil

Preparation :

1. If ciabatta is not freshly baked, toast it !

2. Cut mozzarella, tomato and basil. Here I tried to make small pieces but big slices are good as well.

3. Sprinkle olive oil on ciabatta.

4. Put mozzarella, tomato and basil on bread. (The only exception where I eat veggies in morning, hah.)

5. Enjoy and dream of sunny Italy !
